Recipe for Sweet Potato chews

    No skinnng needed! Just wash them well and slice. You need a good share knife, they're hard.

    Ann, I tried this ....HARD? Hard you say? I could cut a table leg in half easier. What is a sweet potato made of???????:smile2:

    If you are having trouble slicing them, put them in the microwave for a couple of minutes. Softens the skin and makes it easier to peel or slice.

    HaHa, no kidding...I tried three carving knives before I found one that would go through. :eek2: Thanks, Emmasmom...next time around I'll definitely nuke them first!

    BTW my pups are NUTS for these!! :biggrin2:

    Just got back from the grocery store with my supply of sweet potatoes. I'm glad I read this post about them being hard or I would have thought it was me I'll try to nuke them first. I'll probably make them tomorrow. How long should I nuke them for?

    When Mom wanted to peel them, she would nuke them for about four minutes or so depending on how hot your microwave gets, just enough that if you try a knife or peeler on them, the skin will come off. Poke them first before you nuke, so they don't explode and let cool before cutting.

    These sound awesome. Going to pick up some sweet potatoes today. I hope I don't eat them all before the girls get them. :lol:

    Meggie loves sweet potatoes. I don't know if Cooper has ever had them. I'm definitely going to make these.

    Do you have a big chef's knife? (Paring knife will not work well at all, your right it will be like cutting a rock)

    The Chef knife works best because you want to let the weight of the knife do the work. Put the blade into the potato to secure it, then you can put one hand on the BACK of the blade and the other on the handle and put weight into it.

    You can also try cutting one slice from edge and then turning potato over so it is laying flat helps with slicing the rest of the potato.

    I’ve always used the chef’s knife and a wooden cutting board and never had any problems. If you don’t have a chef’s knife try microwaving for 1 minute…all depends on the microwave wattage..Start with 1 minute and you can increase the time if needed..I’d say no more than 4 minutes.
