Part of the problem with the beef is that E.Coli is found on the surface but some stores use a tenderizing tool that makes teeny tiny holes in the meat breaking it down. In doing so, they also can introduce that E. Coli to the inside of your steak, or roast etc. If you don't cook it to well done then you can get sick. Ground beef just mixes all of it together which is why it is often named in these cases - just look at the number of premade burger that have been recalled.
As for our dog food, you are right Barb. We spend a lot of time worrying about what we are feeding them but not what we are ingesting ourselves. There is no totally safe food product out there. Mercury in fish, don't even discuss poultry and who knows about lamb and pork. All we can do is be proactively watching for signs of illness and getting on top of it right away.
