I agree with the others - don't give him a chance to rehearse the behaviours. It takes time for all the hormones to disappear after neutering and he has already learnt some bad behaviours.
It sounds like you still have an adolescent on your hands. Even without the hormones dog's brains change during this period and they can become quite over-bearing. I would do a few things. Limit his freedom, ie his off-leash time, until he has learnt better manners. If he is off leash only allow it in small amounts at a time. regularly put him back on lead and walk him around a bit before letting him off again, it will give him time to calm down a little and not get worked up into a state where he could snap again.
Also think about implementing the NILIF program. Basically every time he wants something - food, treats, play, off-lead time, access to other dogs - he has to do something first, like a sit, drop, shake hands, whatever. It's great for adolescents as it teaches them some self control.
