I've heard this about horses... riding a horse with a straight shoulder is, apparently, not very smooth (or very comfortable!). Makes sense to me. I like your "spring" analogy!
 
You know, riding a horse with a really great rear isn't very comfortable :x In Saddlebreds, a horse with a good rear will throw you up out of the saddle pretty high.
