Sheltie guide says use round off the tip of the ear and place the centre where you want the centre to be (ie if it's a bit skew then shift it). To trim the ear itself, fold the ear over your finger at the point you want the break to be - you can trim in an artificial break by cutting lower up to that point. Also, you trim hard on the opposite side to move the ears - outside if you want to move the ears higher on the head, and inside to move highset ears. Avoid trimming outside/inside too much otherwise, just neaten it up. And as I mentioned, the fur in front of the ear should be trimmed carefully - you don't want to have too big a gap between the tip and the head.
